What it would actually take: A native iOS app would use AVFoundation for capture and Apple's Vision framework for person detection and tracking, with smoothing and crop-based virtual camera moves. The hard part is reliable tracking when climbers are upside down, occluded by holds, or in similar colored clothing, which needs CV tuning and ideally a custom-trained model. Testing on real climbing footage is also required.
