What it would actually take: Build a Postgres-backed app with a job queue that queries each model's API and runs browser-based collection for Google AI Overviews, with a citation parser and a dashboard. The hard parts are anti-bot handling, proxy and rotation infrastructure, and keeping scrapers working as interfaces change, which requires dedicated infrastructure and ongoing maintenance.
